Introduction

Number of Servings: 1

Ingredients

    Red Ripe Tomatoes, 5 cherry (remove)
    Summer squash, .2 cup slices (remove)
    zuchini, .2 serving (remove)
    Onions, raw, 1 slice, medium (1/8" thick) (remove)
    Peppers, sweet, red, raw, sliced, .10 cup (remove)
    Olive Oil, .5 1tsp (remove)
    Water, tap, .5 fl oz (remove)
    minced garlic
    Spinach Spaghetti, cooked, 1 cup (remove)
    ( use what veggies you like and just have them total close to a cup when finished, I do one cup vegggies and one cup pasta as a serving)( this is good with scallops added also)

Directions

boil pasta until tender
chop desired veggies into small peices, saute in olive oil in a small non stick pan
add desired amount of garlic and saute for about 30 seconds
add water cook for 1 minute, stirring to mix flavors
season with salt and pepper to taste
drain pasta
plate pasta and pour veggies over and enjoy
