Introduction

I love fennel (aka anise), so was excited to find this recipe in a mailing sent to me by Giant food store promoting Nature's Promise organic produce. I always keep a container of Nature's Promise organic baby spinach on hand to use in my green smoothies, as well as in my crustless spinach & blue cheese quiche! Ingredients

    1 Tbsp EVOO
    2 Tbs red wine vinegar
    1/2 tsp Dijon mustard
    1/2 tsp minced garlic
    1/2 tsp ground black pepper
    1/2 c red onion, thinly sliced
    6 c baby spinach
    1 fennel bulb, thinly sliced (about 1.5 c sliced)
    4 strips center-cut bacon, cooked crisped & finely diced

Tips

To save cooking and clean-up time, wrap the bacon in paper towel and microwave for 2-2.5 minutes or until crisp (check every 10 seconds after the second minute to avoid burning). This salad can be served immediately, or marinated for 24 hours to allow the flavors to develop. Make sure to let the onions marinate in order to mellow out the strong raw onion flavor and turn onions a brighter color. Try adding in some grilled chicken, crumbled feta cheese or hard-boiled egg to add protein and make a meal of it. Sliced avocado is delicious in this salad, too!


Directions

In a small bowl, whisk together oil, vinegar, mustard, garlic and pepper. Add onions and marinate for 10 minutes. In a large bowl, combine spinach and fennel. Pour dressing and onions over spinach and toss to combine. Top with bacon bits.

Serving Size: Makes 4, 2-cup servings.
