Ingredients

    4 portabella caps
    1 teaspoon olive oil
    1 large onion, chopped
    4 vegan sausages (such as Field Roast), crumbled

Directions

Preheat oven to 375 F.
Remove the stems from the mushrooms. Use a spoon to scoop out the gills, which are the dark brown inner parts. Season with salt and pepper.
Bake for 10 minutes.
Meanwhile, heat the olive oil in a large skillet and add the onion. Saute until the onion starts to change color, about 7 minutes.
Remove the mushrooms from the oven.
Add the sausage to the onions and cook until heated through.
Divide the sausage and onions among the mushrooms and return to the oven.
Bake for five minutes and serve with gravy, if desired.
