The full-fat version is yummy, but has 6 whole eggs, 1 stick of butter, and regular cheese.

Ingredients

    1-1/2 c eggbeaters
    3 c buttermilk
    1 t salt
    1/2 t pepper
    8 oz sharp cheddar cheese, grated
    8 oz 2% sharp cheddar cheese, grated
    7 oz elbow macaroni (measured dry), cooked and drained (I use whole wheat pasta)

Directions

In a large bowl, whisk together the eggs, buttermilk, salt and pepper, then stir in the cheese. Add macaroni; stir well.
Pour into greased 9x13 pan.
Bake uncovered at 350 for 45-50 minutes.
Serving size is approx 1/2 cup.

    A good starter recipe, but I added spices (paprika, garlic powder, onion powder, dry mustard) which gave it a richer taste. When I make this again I will decrease the eggs to 1 cup, my sauce turned to custard. Note: this makes 24 SVGS, which skews the nutrition info-plan on eating this for 4-5 days! - 9/15/09
