Apple Strawberry Salsa with Cinnamon Tortilla Chips

Ingredients

    Salsa:
    2 medium apples (Fuji or Gala preferred), chopped and peeled
    1 cup sliced fresh strawberries
    2 medium Kiwi Fruit, peeled and chopped
    1 small orange, peeled and chopped
    1/4 cup diced fresh pineapple
    1 Tbsp Splenda (or to taste)
    2 Tbsp sugar free Strawberry or Apricot jam

    Tortillas:
    8 whole wheat tortillas
    2 Tbsp melted Light butter or buttery spread
    2 Tbsp honey
    2 tsp cinnamon
    Pam buttery spray (optional)


Directions

Mix the fruits together with the Splenda and blend in food processor or chopper until consistency of salsa. Add the sugar free jam and mix. Chill.
Preheat oven to 375 degrees.
Mix the butter, honey, & cinnamon together.
Spray the tortillas with Pam spray if desired, and spread the buttery mixture on each tortilla and stack in 4's. Cut both stacks into 8 sections each.
Place carefully on cookie sheets which have been greased or sprayed with Pam spray.
Bake for about 8-10 minutes or just until slightly crisp. Watch very carefully so they don't get too crisp.
Cool slightly before serving with the chilled salsa.
Makes about 8 - 10 servings.

    This is fantastic!!! It tastes so good that it's hard to believe it's good for you. I will make this anytime we have a get together or party.
    I did have to change the cooking time and temp for the tortillas though. At 375 for 8 minutes they came out black on the edges. I did 325 for 5 minutes. - 7/6/08

    The salsa is a great idea, but my chips were not good. When I tasted them they had a funny after taste. I just ended up using "Stacey's Pita Chips" in Cinnamon & Sugar flavor. Delicious! - 10/25/07

  • This turned out awesome, I made it for my classmates and I doubled the recipe, it seemed like I made too much but my class ate ALL of it! I will definitely make this again. I also followed others suggestion of just buying cinnamon pita chips, they were perfect with the salsa - 6/23/11

  • This was really great! It was light and refreshing and the crunch of the apples really gave it great texture. I bet it would be lots of fun to make for a party, it would be a great conversation piece if nothing else, but Im betting it would be gone in a flash! - 9/11/07

  • I loved this. My DH loved it. I am making it again today. I liked it for breakfast as a substitute for cinnamon toast and jam. My oven is convection, and had no problems with chips not turning out. I wonder if the butter used had a high water content. - 6/19/07

  • Very good...I didn't add any sweetener to the fruit, and it was sweet enough on its own! Makes enough salsa for many more chips than called for. Although all said they were too full for desert, I went through almost all of it! - 6/11/07
