Number of Servings: 2

Ingredients

    * 2 eggs
    * 1/4 cup soy flour
    * 1/3 cup sour cream (full or reduced fat is fine)
    * 1 tsp baking powder
    * 1 Tbsp olive oil (two can be used for density)
    * 1 Tbsp whole flaxseeds (meal can be used)
    * 1/8 tsp salt (more or less to taste)

Directions

Heat griddle or pan to medium-high heat.
Use non-stick cooking spray or butter (Smart Balance is my favorite!) before dropping batter onto the pan.

Pour batter onto pan so that the pancakes are about 4" in diameter (smaller is ok too but bigger than this and they will be difficult to flip).

Makes about 6 4" pancakes...about 2 servings.

************REMEMBER***************

Be creative!!

For a salty snack, top with cheese, shredded cheese, cottage cheese, etc.

For a sweeter snack, top with natural nut butters or make a nut butter sandwich. If you like sugar-free stuff try some of that too.

    This is a great recipe. Doubled-Used heavy cream, vegetable oil, milled flaxseed. Added 2 tsp each of Splenda & vanilla. Had 2 cakes with sugar free syrup and feel like I just cheated. :). I suggest allowing the batter to rest 5-10 minutes as the second and third batch were fluffier. - 3/25/12

    This is a great recipe. I used yogurt for sour cream and added 1tsp splenda. I also put the batter in muffin pans and baked for 20 min at 350. It was delicious. - 5/17/09

    wow, these were exactly what I needed! How was I supposed to have breakfast for dinner w/o pancakes!? I used heavy cream instead of sour cream since i didnt have sour cream. They took a little longer to cook than regular pancakes but they tasted fabulous with a little butter and sugar free syrup. - 2/4/10
