IntroductionSo, hubby is doing the P90X workout, and the family is trying some of the recipes in the nutrition plan. This soup is AWESOME, and I can eat as much as I want!!! So, hubby is doing the P90X workout, and the family is trying some of the recipes in the nutrition plan. This soup is AWESOME, and I can eat as much as I want!!!
10 cups fat free chicken broth (use reduced sodium if you prefer)
4 small red potatoes, cut into 1 inch cubes
4 cups onions, quartered
1.5 cup carrots, sliced 1 inch thick
3 cups celery, sliced 1 inch thick
2 cups zucchini, sliced 1 inch thick
8 ounces tomato sauce, canned (low sodium if you prefer)
2 cloves garlic, minced
1/4 bunch fresh parsley, chopped
1/4 bunch fresh cilantro, chopped
black pepper to taste
2. Add the zucchini, tomato sauce, garlic, parsley and cilantro. Reduce heat to medium low and simmer 10-15 minutes more until zucchini is JUST tender. Season to taste with black pepper and serve.
Serves about 18, 1 cup serves.
You can also add protein powder if you so desire. 1 TB powder to 1 cup soup.
