Ingredients

    16 ounces ground buffalo (bison)
    1 medium red onion
    1 can low sodium dark red kidney beans, with liquid
    1 can low sodium canned corn, drained
    2 cups low sodium chicken broth
    2 tablespoons minced garlic
    1 tablespoon crushed red pepper flakes
    1 tablespoon paprika
    1 tablespoon chili powder
    1 tablespoon garlic powder
    1 tablespoon worcestershire sauce
    2 tablespoons black pepper
    5 pieces sun-dried tomatoes, diced

Directions

Dice the onion and cook them in a pan on medium-high heat until very brown.

Add all ingredients to the crock pot. Let it cook, covered, on high heat for 2 hours, stirring every half hour. Lower heat to low and cook for another 2 hours, stirring every half hour.

Serve hot.

Yields approximately 7 one-cup servings.
