Ingredients

2 Cups - dry roasted cashew nuts
4 Tbsp - canola oil
1/4 tsp - salt (opt).
2 tsp - honey (opt).
Directions
Makes about 20 - (1) Tbsp servings
1. Process 2 cups of cashews in your food processor. For more "gritty" butter, use less time. I like mine smooth.
2. Once the desired nut consistency is reached, begin adding canola oil one tbsp at a time until desired consistency is reached. You may have to stop and spatula the butter off the sides of the processor.
3. I added a 1/4 tsp of salt and 2 tsp of honey to my mix. This isn't necessary, but I have found that it's fairly bland otherwise.
I've heard you should refrigerate, but I can't figure out why - since there isn't anything that spoils. Store in a sealed container, and spoon out as necessary!
