There was way more filling than my 8 tortillas could handle! I got 8 VERY stuffed mini-burritos out of this recipe and had the leftovers for dinner! It was a little bland, so I added garlic salt and chopped ham. I bet chopped chives would be excellent in there and other veggies. Or some salsa.....
