We make these at the beginning of the month, then wrap them individually in foil and freeze them. They can be reheated, straight from the freezer, wrapped in a paper towel, in about 1 minute. Ingredients

6 eggs
Quick Grits, 4 servings prepared, with 1 tbsp light canola margarine
1 tbsp canola oil
8 Don Marcos Fajita Style flour tortillas
1 cup shredded cheese
Directions
1. Scramble eggs in 1 tbsp canola oil
2. Mix grits, eggs, & shredded cheese in large bowl
3. Distribute egg mixture evenly across 10 floured tortillas. Roll up, then freeze or serve.

There was way more filling than my 8 tortillas could handle! I got 8 VERY stuffed mini-burritos out of this recipe and had the leftovers for dinner! It was a little bland, so I added garlic salt and chopped ham. I bet chopped chives would be excellent in there and other veggies. Or some salsa..... - 12/27/11
