I mixed the batter in my vitamix and it was very thin. I wasn't sure how they would turn out, but they were very tasty and satisfying! My hubby is not a big blueberry pancake fan, but he ate 2 served with sugar free syrup!! The leftovers are in the freezer, so we'll see how they heat up!
