Nutrition & Calorie Comments  

I have never been a fan of 'sweet' sweet potatoes. I dislike the cinnamon and nutmeg that so many people add to them.
I personally think rosemary is better than thyme, and I also peel some of the skin off. I know there's nutrients in the skin, but I am not a huge fan of it or the added calories.
I love sweet potatoes cooked like this. My favourite combination is rosemary, salt and pepper. Sometimes I even turn them into mashed sweet potatoes after I roast them, with a bit of butter and milk. Yum!
