Ingredients

    1 whole wheat low carb tortilla
    1/4 cup vegetarian refried beans
    1/4 cup vegetarian chili with beans
    1 oz. cheddar or colby cheese, low fat
    1 tbsp. red taco sauce, medium

Directions

Lay a flour tortilla flat and fill with 1/4 cup of refried beans, 1/4 cup chili and one ounce of shredded cheddar cheese. Roll up.
Microwave until warm and cheese is melted.
Open up and top with salsa.
You can also top with shredded lettuce and chopped up tomatoes without adding many calories.
These are great to take for lunch.
Just roll in a paper towel prior to microwaving and put in a plastic bag.
Store in the fridge until lunch time and then microwave.

    These were good. It took no time at all to make. The taste was good but the texture was really soft, nothing to really chew. :) The only crunchy thing was the jalapenos we added. I will make this again when time is lacking but probably won't put it in our food rotation. Thanks for an easy recipe. - 11/27/11
