Ingredients

    4 cloves of garlic
    3 medium zucchini sliced
    2 tablespoons olive oil

Directions

1. Peel and dice the garlic while heating the olive oil in a sauté pan over medium heat.

2. Add garlic and zucchini. Stir occasionally. Cook until zucchini is lightly browned.

Serves 4.

    This is easy and very tastey...I use less olive oil and sprinkle a bit of romano cheese on top when done, about 1 TBSP. very good too. - 2/15/09

    I, too, mix the yellow squash with the zucchini. I add sliced onions, bell pepper, herbs, and a little organic, range free chicken broth. There's nothing like home grown fresh vegetables. - 6/7/08
