Introduction

This steel cut oats recipe is similar to Alton Brown's Food Network recipe, but it does not have the whole milk or buttermilk. I use 1% and it turns out great! Ingredients

    1 cup steel cut oats, dry
    1.5 Tbsp. butter, salted
    3 cups boiling water
    1 cup 1% milk (optional... I left this as a topping choice as we like ours thicker)

Directions

Melt the butter in medium saucepan. Stir in steel cut oats. Cook until oats give off a nutty toasty appearance and scent, about 3 minutes. Add hot water to hot oats. Cover and let cook for 30 minutes. Do not stir. When done, open the cover and stir in milk to desired thickness (if you use milk, be sure to add it to your tracker). Stir until the mixture reaches a creamy consistency. Serve with desired toppings such as blueberries, raisins, brown sugar, cinnamon or pancake syrup. Makes approximately 4 servings

    Yum, Lori, I don't use any butter or salt, just water (which I bring to a boil first). I just follow the instructions on the bag... not nearly as gourmet!!!then we add fresh blueberries and a little maple syrup... We love it, almost every morning!!! Enjoy! - 7/30/10

    Very tasty as is, without the 1% milk. Thick, nice flavor. I added the following to one serving after cooking: splash of soy milk, 1 Tbsp ground flaxseed, sprinkle of apple pie spice and sprinkle 1/2 packet of stevia. Yum! - 4/10/11

    I love love love steel cut oats. When I was in Ireland my mother was always shocked that I would pass up full Irish breakfast for a bowl of lowly oats! And not low-anything, but such a great treat was cream and Grand Marnier. OMG. - 8/17/10

    LOVE this recipe. the cooking of the oats in some butter really gives a great flavor to this. I use just a little bit for flavoring and it is yummy. I used all water (no milk) to keep calorie count low. Thank you for sharing! - 2/10/13

    You were right! This is just as tasty as Alton Brown's recipe, but healthier! I made it this morning added some dried cranberries and some stevia & it was the bomb!!! My 17 year old son ended up polishing off the rest of the pan. Now I know what to make on those cold Colorado mornings!! Much thanks! - 9/23/12
