Introduction

A nice summer salad that is a great dish to bring to an outdoor party... or to eat any time of the year. This recipe was modified from a full fat version and it tastes quite nice without that extra fat! The original recipe also called for baby spinach but not everyone likes spinach (like my dad). Number of Servings: 6

Ingredients

    6 cups romaine lettuce, shredded
    3/4 cup Miracle Whip Fat Free Dressing
    3/4 cup sugar
    1/4 skim milk (non-fat)
    2 tbsp white vinegar
    2 tbsp poppy seed
    1 cup fresh strawberries, sliced
    1 small red onion (or equivalent to 1/2 cup), sliced

Directions

1. Wash and dry greens. Place in salad bowl and chill until ready to serve.

Dressing:
2. Combine dressing, sugar, milk, vinegar and poppy seeds with whisk until smooth. Chill 1 hour.

3. Toss strawberries with greens. Pour dressing over salad and toss.

4. Garnish with onions.

Makes 6 1-cup servings.

(Note: In the picture, onions are missing. Instead, I put in some dried onion flakes and threw in some sliver almonds. I really like the almonds in this salad!)

    I made this dressing recently for a spinach & strawberry salad and it was WONDERFUL... Highly recommended. I prefer mayo to miracle whip. - 7/6/11

    I used only about 1/2 the dressing on the salad, just enough to lightly coat everything. What a refreshing taste...a nice change from the usual salad. I'm adding this one to my cookbook! - 9/16/10

    Enjoyed this very much....tweaked it a little bit by using a store-bought light bleu cheese dressing instead of making my own dressing and added a few chunks of bleu cheese. Yum! - 6/1/10
