So good your kids will eat 'em! So good your kids will eat 'em!
Number of Servings: 6

Ingredients

    1 can Pink Salmon (or fresh)
    1 cup Crushed Whole Wheat Crackers
    1 Egg (white only)
    1/2 Small Onion
    Spray Margarine
    Mustard

Directions

Drain canned salmon and pour into bowl, flake with a fork. Add egg white and mix thoroughly. Add chopped onion and crushed crackers, mix well with hands. Mold into 3" balls, pressing together to make plump patties. Set aside. Spray 2 squirts of margarine in non-stick frying pan, turn heat on medium. Fry patties until golden brown on one side; spray 2 more squirts in pan and flip and fry to golden on other side. Reduce heat to simmer and cook covered for 10 minutes, turning once. Squeeze fresh lemon or a teeny bit of mustard on top. Makes 6 patties. Delicious and easy!

    I make these but use cooking spray, not butter, in a non-stick pan. I also use onion salt instead of onions to get the flavor without offending my picky eater.

    Incredible!

    These were great! My picky children ate them up and my husband loved them. I used regular ritz crackers and egg replacer because the children have egg allergies. Will make again! Thanks for sharing - 1/22/11

    I haven't tried this recipe but I do make salmon patties quite a bit...heart healthy bisquick works really well also and is even healthier...and add green peppers...DELICIOUS!!! I've never put mustard in mine but I'm going to try it out..thanks for the recipe! - 6/26/09

    This was good, but helpful information to add would be what size can of salmon was used - using the small can I had with onion made very onion-y salmon cakes, and I think the poster must have had a bigger can. - 6/10/09

    I LOVED these. Used wheat thins low fat crackers, & it had a kinda sweet flavor. Luckily they aren't too high in calories & fat because I could binge eat these!!!! Couldn't even TASTE the salmon! Oh, and used honey dejon mustard... mmm...mmmm..mmmmmmm!!! - 4/11/09
