Introduction

Ingredients

    1 large onion, sliced
    32 organic baby carrots, full or sliced
    2 1/2 pounds boneless pork roast or 8-5oz. chops
    1 cup hot water
    1/4 cup white sugar or sweetener
    3 tbsp red wine vinegar
    2 tbsp soy sauce
    1 tbsp organic ketchup
    1/2 tsp black pepper
    1/2 tsp salt
    1/4 tsp garlic powder
    1 dash hot pepper sauce, or to taste

Tips

Garnish with a sprinkle of parsley for even more color!


Directions

Arrange onion slices evenly over the bottom of the slow cooker, and then place pork on top of the onion.
In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over pork.
Add baby carrots.
Cover, and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
*This recipe goes great with sugar snap peas and a baked potato with butter substitute spray.

    I cut the water back to 1/2 cup and added a 1/4 cup of red wine (it was 1/4 less liquid than called for). I used Balsamic Vinegar and Brown sugar instead of white. I also added some celery stalks for extra flavor...I replaced Garlic Powder with Fresh Garlic- 2 crushed cloves. We enjoyed it. - 6/10/10

    Delicious. The whole family enjoyed the recipe. I would add more carrots next time because they were quickly eaten. I might also reduce the amount of sugar. I think it would taste the same. - 3/27/08

    I was short on time so I opted not to do the pork chops in the slow cooker and did it in the oven instead. Yum, yum! They came out full of flavor, juicy and only took about 45 mins to cook. I also added some carrotts to the bake with some mash potatoes on the side. DELICIOUS! - 9/2/10

    I made this and everyone loved it. Instead of using the clow cooker or crock pot, I covered and cooked in the oven. Served with an array of fresh raw vegetables and galic seasoned boiled potatoes, it made a great dinner. - 4/10/08

    Great recipe!! I didn't add sugar, but added about 1/4 c. agave nectar instead. It cooked all day and shredded easily at the end, and we served it as sandwiches. Yummy! - 3/24/09

    I put a layer of sliced sweet potato over the onions and omitted the carrots. You can also use 1/2 cup of beer instead of the vinegar. It's good. - 8/17/10

    Smelled so good that I had to sneak a taste as I was slicing this for dinner later this eveing. Great flavor! and will for sure make again.
    Only thing I left out was the carrots because I didn't have any.
    Cinco de Mayo used the leftovers, pulled in Carnitas! Yummie! Slightly sweet,tart&tangy!

    I just made this in my small slow-cooker with a small pork roast. (about 1 lb) . This was my 1st time using the slow-cooker so I might have to do some adjustments. The meat was tender, but not so tasty. I had to thicken the sauce with corn starch. It was good after that. - 1/20/08

    This was EXCELLENT! My husband and I just LOVED it, and my daughter enjoyed it very much too! Loved the flavour, and how the carrots and onions picked it up! The porkchops were super moist, and flavourful too!

    I didn't have red wine vinegar, so I substituted with regular vinegar, no problem!

    Oh. My. Word. This was a huge hit in my household! My pork roast was 3.5-4 lbs, but I kept all the other ingredients as they were listed in the recipe and it was SO GOOD! Loved the sandwiches we made from the leftovers, too. The only change I will make is to add more carrots - they were eaten up all - 9/16/15

    Great Recipe :) I used 4 large pork chops and cooked for 7 hours and the meat was falling off the bone. Ran out of soy sauce so didn't add that. Used Apple cider vinegar as I didn't have red wine vinegar. Also only used 3/4 of a cup of water. Carrots were really tasty when done. - 12/31/13

    Great recipe. Can be out all day or at work and still have a nice dinner when we arrive home. Easy to vary to your tastes. I put potatoes in the oven so that we have baked potatoes as a side (have a programmable oven so those are ready when I get home too). Easy prep for a hearty, healthy meal. - 11/30/13

    I like the substitution of brown sugar for refined. I also went with minced garlic rather than powder. Reducing the recipe for two porkchops instead of 8, I put 2 medium diced potatoes on the bottom with a dozen baby carrots and 1/4 of the sliced onion, and I added 1/2 cup of fresh cranberries. - 3/17/13

    This is my new favorite recipe. I did follow suggestions by Doreen1562 as follows: 1/2 cup water and 1/4 cup merlot wind. I used Blackberry Ginger flavored balsamic vinegar and splenda brown sugar. I also used minced garlic not powder. Did not use celery. - 12/21/12

    Excellent recipe! For just two of us, I cut it down to about 1/3. It came out great. Just used 3 pork chops and 1/3 of everything else.     I was looking for a lower sodium recipe for the way I do pulled pork. (So easy: I just put a bottle of bbq sauce over the roast and it comes out so yummy!) But this was no better. What was the point of the carrots? They were too mushy to eat. I think I will just look for a lower sodium bbq sauce. - 3/14/11
