Introduction

Number of Servings: 10

Ingredients

    1 small onion
    1 clove of garlic
    1 cup of spinach
    5 cups of beef broth
    1 1/4 cups of red wine
    1 pound of sausage
    2 cans of diced tomatoes
    2 medium zucchini
    1 cup whole wheat pasta

Directions

Brown sausage, onion and garlic
Drain sausage mixture
Add to crockpot
Slice zucchini
Add to crockpot
Add the tomatoes, broth, and wine to crockpot,
Cook low for 4-6 hours
10 minutes before serving add pasta and spinach
Enjoy.

This soup makes 10 2-cup serving. You can add water as needed to change the consistency. You can also use different kinds of vegetables and pasta

    As the poster notes, this recipe is easy to adapt. I added a chopped green pepper and substituted 12 ounces of a tri-color pasta for the whole wheat. I doubled the onion and garlic and added oregano, basil, and parsley to the seasonings. I reduced the salt with two cans of no-salt diced tomatoes. - 8/27/12

    I made this last night for a party...SO easy, and SO yum! I substituted chicken broth (low sodium) used no salt added tomatoes and white wine and turkey Italian sausage instead of the beef broth, etc. It was a little bland but a dash of salt made it perfect. I cooked the pasta before adding - 12/16/08

    This recipe was very tasty and satified the tummy. I substituted spaghetti squash for the zucchini, as that is what I had on hand. I also substututed rice for the pasta as that was left over from last night. Delicious - 1/9/08
