Ingredients

    2 large egg whites
    2/3 cup granulated sugar
    1/4 tsp cream of tartar
1/2 tsp flavoring of choice (almond, strawberry vanilla, rum, etc.)

Directions

1. In a large bowl, with a mixer on high speed, beat egg whites with cream of tartar until thick and foamy. Gradually add sugar and continue to beat until mixture holds stiff, shiny peaks.
2. With a spatula, gently stir in flavoring extract and any add-ins. Spoon 1/2-tablespoon portions into 1-inch-wide mounds (or with a pastry bag fitted with a 1/2-inch plain or star tip, pipe 1-inch-wide mounds) about 1 inch apart onto cooking parchment - lined 12- by 15-inch baking sheets.
3. Bake meringues in a 275° regular or convection oven until dry and firm to touch on the outside and almost dry inside (break one open to test), 30 to 35 minutes; if baking two sheets at once in one oven, switch their positions halfway through baking. Let cool for 5 minutes on sheets, then slide a spatula underneath meringues and transfer to racks to cool completely.

Great recipe. I make them often and try different flavorings and ad-ons. We like the almond extract with about 1/3 cup of mini chocolate chips. - 1/11/10

These were SO easy and so much fun to make with the grandkids! We dyed them green and red and used mint flavoring and raspberry...SO yummy! Thank you for sharing! I love Steph-Louise's idea of the crushed candy canes. Guess we'll just have to make another batch! - 12/14/09

This are great cookies. I used Rum extract, and I cooked just a bit too long, but they are still really good. I will definitely make them again. - 3/5/11

This is the exact recipe I use, except with only 1/2 cup sugar (so only 9 cals per cookie / 18 per two, according to the recipe calculator). Great ideas about colour and flavours, thanks all! Time to experiment with my fourth batch this season :-) - 12/23/10

I made these last year for Christmas. You can make the mounds and sprinkle things like nuts, sprinkles, colored sugar, candy canes, and the like. You can even swirl in some food coloring and it is really pretty. :D My favorite were the ones that had crushed walnut. yummy! - 5/19/10

It's pretty cool, but when I started adding in rootbeer flavoring, I found that I need more then the recipe calls for. This is probably specific to this flavoring ,given all the good comments so far. :3 - 1/4/16

I have made these for years - my husband is diabetic so I substitute the sugar for Splenda - we can't tell the difference and that makes them practically guilt free - 2/28/14

JMOUSSEAU -beat them longer -if you have a stand mixer it makes nice easy work.

These were REALLY good!!! I added pineapple and coconut flavoring -great for the family retreat I'm going on this weekend. Tasty and surprisingly easy (with the help of my stand mixer -if by hand I'd have trouble.)

Okay - I am having a really hard time successfully frothing up these merignue's. I get them all frothy and once I add the extract, it liquifies. However, I did use the liquid anyway(poured in muffin cups & baked) and they were delish!
    Any tips for me?
