Ingredients

    8 cups diced potatoes
    1/3 cup onion, chopped
    3 (14 oz) cans of low sodium chicken broth
    1 can cream of chicken soup, fat free
    1 (8 oz) pkg of fat free cream cheese, cubed
    6 tbsp Oscar Mayer Real Bacon Bits
    Chives (optional, not included in my recipe)

Directions

Combine first four ingredients in crock pot.
Cover and cook on low 8 hours or until potatoes are tender.
Add cream cheese and blend.
Top with bacon before serving.

    Awesome! I added 16 ounces of freshly cooked crumbled bacon at the start. After the potatoes softened I added twice the amount of room temp cream cheese plus about a cup of half and half. Heated it for another 30 minutes, and served topped with shredded cheese and sour cream. Oh, and if its too "bro - 11/4/15

    Very good!! I didnt have 8 hours so I boiled the potatoes before adding them to the crock pot. I think I'll add carrots like Brookers next time! - 2/13/09
