Ingredients

    16 oz angel food cake mix
    5 tsp confectionary sugar
    8 oz strawberry yogurt
    1 oz instant sugar-free vanilla pudding mix
    3 drops food coloring, optional
    2 c reduced-fat whipped cream

Directions

Line a 15” x 10” x 1” baking pan with wax paper. Prepare cake according to package directions. Pour batter into prepared pan. Bake at 350 for 15-20 minutes or until cake springs back when lightly touched. Cool 5 minutes. Turn cake onto a kitchen towel dusted confectioners sugar. Gently peel off wax paper. Roll up jelly-roll style in the towel, starting with a short side. Cool on wire rack.

In bowl, whisk yogurt, pudding mix & food coloring. Fold in whipped topping. Unroll cake; spread filling evenly over cake to within ½” of edges. Roll up. Cover and freeze. Remove from freezer 30 minutes before slicing.

    Very easy to make and delicious! I added 1 tsp of lemon extract to my yogurt mixture - I love lemon! Perfect for a lowfat/calorie birthday cake! :) I used an extra large jelly roll pan (16X11.5 approx) and the batter puffed up along sides but did not overflow onto oven. Will def keep recipe! - 5/25/11

    mine didnt roll the way the photo looks......but it tasted amazing! I didnt have the yogart, so I put in plain yogart....a little vanilla extract.....chocolate sugar free pudding with the fat free cool whip...had friends for dinner and the kids went insane over this! they took the left overs! - 5/25/08

    Oh my goodness! My kids are not big on strawberry so I changed this one up a little. I used sugar free chocolate pudding and low fat vanilla yogurt then mixed together sugar free and fat free whipped topping. It was so delicious! My kids even loved it! - 3/2/08
