Ingredients

    10 oz spaghetti, linguini, or similar
    1/3 cup hot water
    1/3 cup smooth peanut butter
    2 teaspoons reduced-sodium soy sauce
    2 teaspoons vinegar (I use white wine or rice vinegar)
    2 scallions, finely chipped, divided
    2 cloves garlic, very finely minced
    1 teaspoon sugar
    ½ teaspoon hot re pepper flakes, or more, to taste

Directions

Cook the pasta in boiling water it is al dente. Drain the pasta, set it aside, and keep it warm. Meanwhile, in a medium bowl, blend the water and peanut butter. Stir in the soy sauce, vinegar, all but 1 tablespoon of the scallions, garlic, sugar, and hot pepper flakes. Combine the sauce with the hot spaghetti in a heated serving bowl. Garnish the dish with the 1 tablespoon of reserved scallions.

    We had this tonight with bowtie pasta and the family loved it! I never thought of putting peanut sauce on pasta! - 9/9/08

    Very Good
    I made this tonight and my husband loved it! It tasted great with a hint of peanut butter. We ate it with the Pong Pong Pork Chops. They went perfectly together because the Pork Chops were spicy and the noodles helped to tame it down a little. - 6/13/08

    Very Good
    This was very good - we liked it; a bit dry but I suspect that was my fault (accidentally let the sauce and noodles cool too much). I also added boneless chicken breast meat to it, and some snap peas. Other than it being dry/sticky, it was very good. - 2/5/08
