Ingredients

    1-1/2 lb. chicken breast, skinned and fat removed
    3 lemons, juiced and zested, flesh cut into segments
    1 Tablespoon vinegar (or balsamic vinegar)
    3 teaspoons chopped fresh oregano or 1 teaspoon dried oregano, crushed
    1 medium onion, sliced
    1/4 teaspoon salt
    Black pepper to taste
    1/2 teaspoon paprika

Tips

Using skinless chicken breasts means this tangy dish is lower in saturated fat and cholesterol. You can also use chicken thighs and drumsticks.


Directions

1. Place chicken in 13x9x2" glass baking dish.

2. Mix lemon juice, vinegar, lemon peel, oregano, and onions. Pour over chicken, cover and marinate in refrigerator several hours or overnight, turning occasionally.

3. Sprinkle with salt, pepper, and paprika.

4. Cover and bake at 325º F for 30 minutes. Uncover and bake 30 minutes more or until done.

Yield: 4 servings--Serving Size: One chicken breast with sauce

    I didn't have fresh lemons so I omitted the peel, but it was tasty without it. It was so easy to prepare. My young children thought it was too tangy but the adults liked it. Sometimes chicken can look really white and bland but with paprika on top, it gave the chicken a nice color and appearance. - 7/17/08

    Seemed to border on sour taste--next time will probably add some reduced-sodium chicken broth, halve the lemon juice, and replace the oregano with tarragon. My 6-year-old wasn't fond of it. - 5/9/09

    My husband isn't crazy about lemon so I used lime instead and added a little Jamaican jerk seasoning to the recipe. It was very tasty! The next time he goes out of town, I'll try the lemon version for my son and me. Thanks! - 5/29/08

    I left out the lemon peel and added dill. Next time I would use less oregano, and more onion, they were delicious! I would probably add garlic, too. I used cornstarch t the end to thicken up the sauce. I loved it!! - 2/13/08

    My picky kids and husband didn't care for this. It was ok if you like lots of lemon. The lemon peel taste was not very good. Would recommend leaving it out. - 11/26/07

    I do almost exactly the same thing, except that I will fry the chicken in a pan instead of baking. You don't need any add'l oils; just use a good non-stick pan. As the chicken cooks on each side, take it out, slice it thin, then put it back in to finish cooking. This makes a great 10-minute meal. - 5/29/09

    I have a hard time eating chicken - I just don't really like it - but this recipe is GREAT!! It's going to become one of my standard meals and I'm going to "write home" about it. ; ) Oh, I'll probably do more onions next time but that's just because I love onions. - 9/9/08

    Followed exact recipe. I thought it was OK, my husband thought it lacked flavor, my 10 yr.old thought it was too lemony and my 6 yr.old ate it without commentary. I even used fresh oregano -disappointed because it's flavor was lost. Overall, disappointing! - 11/12/08

    As with anything you marinate, I found that to truely get the whole lemony experience with this recipe you NEED to pierce the chicken breasts all over so the lemon really gets into the meat! Very nice recipe for something different! - 11/15/09

    I browned the chicken first to give it a bit of color (I was afraid it might taste boiled! probably wouldn't have. :-)) Added garlic and cut back on some of the lemon juice and used a bit more wine. reduced the sauce a bit before serving - delicious! I liked the added peel very much. Nice recipe! - 10/19/09

    I thought it was tangy not really lemony. My husband loved it, but he loves lemonade. I didn't put the lemon peel in and probably more spices.     I didn't want to wait an hour to eat so I took one of the pieces of chicken and cooked it on my Foreman Grill after marinating it and it was fabulous! The rest I stuck in the oven as directed and it turned out great, too. Instead of lemon peel though I would suggest using lemon zest. - 12/9/09

    Loved the easy ADVANCE prep- setting it up to marinate in the morning and then popping it in the oven at the end of the day! Enjoyed by everyone. Flavorful and no-one missed that it wasn't fatty. A bit on the acidy side- next time i might omit the white wine vinegar and use white wine instead. - 11/14/09

    It sounds like there is a little bit too much oregano for my taste. With the lemon, the suggestion of adding capers sounds appealing to me. Will definitely try it, by using a little less lemon, but after tasting, I might add more. - 11/13/09
