Introduction

Number of Servings: 4

Ingredients

    2 bunch spinach
    1/4-1/3 cup skimmed milk
    2 tbsp chopped onions
    3 medium tomatoes (finely chopped)
    1.5 tsp ginger-garlic paste (I have explained how you make it)
    1.5 tsp paprika
    2 tbsp sunflower oil
    A pinch of turmeric
    Salt to taste (I use a teaspoon of salt)


Directions

1.To make a ginger garlic paste, take equal quantities and grind it to a paste. This can be stored in the refrigerator for around 2 weeks. Take one and half teaspoons of the paste for the curry.
2. Blanche the spinach in boiling water until the leaves become soft enough to puree. It takes about 2 minutes.
3.Now puree the spinach adding milk slowly as needed. Add enough milk to make a thick puree. Depending on the spinach you'll need 1/4-1/3 cup of milk
4. Sautee the onions on a medium flame until it turns golden brown
5 Add ginger-garlic paste and fry for 2 minutes
6. Add the chopped tomatoes. Once the tomatoes become soft add turmeric, salt and paprika.
7. When the mixture becomes uniform, add the pureed spinach and cook for 2 minutes.

Your Palak Saag is now ready. It tastes amazing served with Indian breads. You can also eat with regular bread or rice. This makes about 4 half cup servings. You can add some cottage cheese/ tofu along with the tomatoes if you like.

    Does blanching drain away any of the nutrients available in spinach?

    I tried this and other recipies like it, and I can never seem to get that yummy flavor and smooth texture like in the Indian restaurants. My family definitely did not like this, so I guess I will give up trying to cook this myself and leave it to the experts! - 3/28/10
