Ingredients

    2 tablespoons olive oil1 tablespoon unsalted margarine1 small onion, chopped2 cups uncooked carnaroli rice1/4 cup soy milk (or skim milk)1/4 cup apple juice6 cups vegetable stock1 (8 ounce) container firm tofu, cubed1 (6.5 ounce) jar marinated artichoke hearts, drained, liquid reserved2 cloves garlic, minced1 (8.75 ounce) can low salt yellow corncayenne pepper to taste

Directions

1. In a large saucepan over medium heat, heat oil and margarine. Stir in 1/2 the onion, and saute until tender. Stir in the rice, and cook until lightly browned.
2. Pour soy milk and apple juice into the rice. When the rice has absorbed the liquids, gradually pour in vegetable stock, about 1/2 cup at a time, until absorbed. Reserve about 1/4 cup stock. Cover, and cook about 20 minutes, until rice is tender.
3. In a medium saucepan over medium heat, lightly brown the tofu and remaining onion in the reserved marinated artichoke heart liquid. Stir in the garlic.
4. Remove the rice from heat, and thoroughly mix remaining vegetable stock, tofu mixture, artichoke hearts, corn, and cayenne pepper into the rice.

Makes 8 servings.

    This was good, but I don't think I'd make it again -- too many other risottos I like better. I calculated the calories at almost double what is shown here ... I thought it sounded too good to be true! - 2/28/09

    you can make this as spicy as you want, I tend to like things hot! I also like to brown and bake the tofu before using it in this kind of recipe. - 2/12/09

    Excellent. One thing should be noted risotto is a very time intensive recipe and you should give yourself more than an hour to cook this! I used frozen (defrosted) corn rather than canned to reduce sodium! - 11/28/07

    This is delicious, and has been added to our regular rotation. Thanks for sharing! But I have to mention that the nutrition info is way off. It only includes 1/2c of white rice, rather than the 2c of arborio rice used. The actual calories for this dish (which for us made 6 1c servings) is 344. - 7/26/12

    Excellent! (I got 6 servings though.) I added tarragon as rice cooked: it was great! The juice added a good touch of "sweet" balancing the broth very nicely. I doubled the quantity of tofu. My husband exclaimed: Yummy! and that says a heck of a lot!! Thanks for this recipe! - 8/5/09
