Ingredients

    1 large egg
    1/4 cup Salsa
    1 oz. reduced fat cheddar cheese
    Cooking spray

    Couple of notes:
    -sodium looks high in this recipe becuase it assumes ready made salsa. I make my own salsa w/o salt and that greatly reduces the sodium level.
    -you can use eggbeaters to reduce fat but I think the texture of whole egg is much better

Directions

Serves one

1. Spray a small ramekin or mug w/ cooking spray
2. Place salsa in bottom of bowl, crack egg on top of salsa and then top w/ cheese
3. microwave for anywhere from 30 seconds to 2 minutes depending on power of the oven and how runny you like your yolk,
4. Enjoy!!

    First line the dish with thin-sliced ham.
    Then you can lift it out and serve it on a plate.

    I was afraid the egg might explode in the oven, but was pleasantly surprised that it just cooked. I did adjust the cooking temp, though. It took about 90 sec. at power 7. Very good/quick breakfast. - 10/14/09

    We made this today, with a few variations and it was awesome. We used fit and active egg sub(60 cal for 2 eggs worth) and used "natures promise" low sodium, no fat salsa. and we actually baked it in the toaster oven for 10 min. and it was awesome! will definatley do often! thanks - 1/17/10

    I cooked it my first time with 3 eggs in a bowl. One spot kept looking a little runny, so I kept nuking it for more. Well when I cut into it with my fork, it literally launched yolk at my face!

    Great recipe, but if you're gonna make any modifications...cook safely, folks! :)

    So GOOD, so QUICK. I used only 1 Tbsp of salsa and nuked it for 50 seconds and egg was almost perfect (few seconds less next time for a softer yolk) Put it atop a slice of whole wheat toast. Delicious breakfast in less than 2 minutes! - 2/28/10

    I made this yesterday and it was GREAT! I bragged to my DH about how he missed a great breakfast. I might lesson the salsa to half the amoutn just because it was a lot for salsa then I enjoy, but non the less delicious! - 12/3/09

    Such a great idea!! I make scrabbled eggs for my DD all the time in the microwave, so easy and easy clean up. I cooked mine on H for about 90 s & then topped with 2 thin slices of turkey and 2% Kraft american cheese. Slide on top of a low cal slice of wheat toast. Perfect protein filled bfast! - 8/24/11

    This was excellent! I used 1 oz. finely shredded cheddar and I think I could have gotten by with less. Next time, I will cook a little bit before I add the cheese as with all the cheese it was hard to tell if the egg was done. Mine was a little underdone at 80 seconds on high.     I too substituted 1/4 cup egg sub for the egg. It was great! Puffed up and was so light! I stirred it twice during cooking and then just overturned the glass onto the plate. neat presenation for a different egg breakfast! - 5/23/11

    This was so good and I'm not even an egg fan! I made mine with 2 egg whites instead of 1 whole egg, added a little pepper before a small sprinkling of cheese and nuked it in a ramekin for 90 seconds. It looked beautiful when it came out and was perfectly cooked. :) - 1/21/11

    really good... I mixed the egg into the salsa after about as minute...then procedded to cook on 30 power for 3 or 4 minutes more...you just have to keep checking until you get it right. I added the cheese on the top..
    this is really good with a couple of TLBS. of cottage cheese...
