Ingredients

    1/2 cup applesauce
    2 cups shredded zucchini
    1 1/2 cups sugar
    2 tsp vanilla
    2 cups flour
    1/2 cup cocoa powder
    1 1/2 tsp baking soda
    1 tsp salt

    6 tbsp cocoa powder
    1/4 cup butter
    1/4 cup milk
    1/2 tsp vanilla
    2 cups confectioners sugar

Directions

1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
2 In a large bowl, mix together the applesauce, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini. Spread evenly into the prepared pan.
3 Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.
Makes 24 brownies

    Peel the green off the zucchini. Cut in sections lenght wise then, then cut off the pithy seed part. Then your zucchini, is ready to shred. Zucchini has no taste of its own if you follow this rule. It takes on the taste of your other ingredients. - 1/9/09

    For brownies, these were disappointing. For healthy chocolate zucchini cake, it was just fine: a nice cake texture, moist, and chocolaty. There was a distinctive this-is-not-a-brownie flavor to it, though, probably from the zucchini. I added chocolate chips instead of making frosting. - 9/27/08

    Absolutely Incredible! The entire family loved them! They were eaten within 48 hours of making them! Will definitlely be making them again- they were so moist! I did modify however by adding 1/2 cup more applesauce, 1 tbsp more of vanilla, and also 1/4 of milk :) delicious! - 11/2/08

    I made it exactly and no one in my family liked them. The zucchini flavor (and smell) was too strong and looked like grass! I wish I would've pureed instead of shredded the zucchini. The brownies also had a strange sponge-like texture. We all took one bite and the rest went in the garbage. - 9/23/08

    I followed the directions but the batter did not have enough liquids-it wouldn't mix anymore and there was still dry ingredients,so I added 1/3 cup water and it turned out perfect.I froze about half of the brownies.I just tried them;can actually eat them right out of the freezer(& not frozen solid!) - 9/10/08

    I made this with Splenda, and had to add more applesauce because it was too dry, but it cut a few calories and was really good. My son doesn't like zucchini and refused to eat any until he saw how much everyone enjoyed it and then he tried them and loved them too. - 9/7/08

    They were delicious! They were a little spongy but once you get past that the flavor was great! The icing makes everything better!!! I went ahead and kept the zucchini in the food processor until it was a puree. I don't want to be able to taste the texture of zucchini, especially in a brownie. - 7/17/08

    These were eventually very good. I sub'd sucralose and erythritol conf style as sugar subs , and used ICBNB. Many of negative comments were reflecting my own experience, but I did not alter the recipe other than as above. Icing made it wonderful and helped my fears disappear!! - 10/27/15

    Very good with rich chocolate taste! I removed some of the peel but wanted to keep more of the nutrition--
    The first time I made these I didn't frost them, but the second time I did and it made it a big hit with my kids.

    They didn't have good flavor and were spongy. My daughters ate them because they knew they had chocolate in them. I would rather just stick to making regular brownies and use applesauce as a substitute for the oil. - 5/6/09

    Very Good
    By themselves, not great, but fantastic with the frosting. I plan to make them again, reduce flour to 1.5 c, increase cocoa to 1 c. - weren't chocolatey enough for me. Same with frosting - more cocoa, less sugar.

    Also, helps to FINELY shred zucchini and mix zuc. with sugar - batter not so dry.

    i tried them with 1/2 sugar and 1/2 splenda and no frosting. next time i will try using some whole wheat flour. i do not like to make too many changes at once. could not taste the zucchini. - 3/20/09

    O yummy!!! This recipe is a keeper. I used unsweetened apple sauce, reduced the sugar to 1 cup, and pureed the zucchini. The texture was fabulous and my kids couldn't get enough!!!! - 3/7/09

    These were wonderful. I pureed my zucchini. I used whole wheat flour, but they were moist and very chocolatey. I really liked them. I wonder how many calories without the frosting? I just did the calculations and it comes out 96.7 calories for the frosting. Does that make the brownies only 57 cal? - 2/8/09

    I needed to use different ingredients because I'm diabetic, but mine still tasted great. I used CAROB instead of chocolate, and Splenda instead of sugar, and whole wheat flour with some bran added for fiber. Also, because i have high blood pressure and am on a low salt diet, I put in no salt. - 2/3/09
