Ingredients

    2 cups Spaghetti Squash, cooked and separated into strands
    1 large egg white
    .5 cup white flour
    salt and pepper to taste

Directions

Put the squash and egg white into a mixing bowl.
Fold in the flour, 1 Tbsp. at a time until the mixture forms a pasty dough.
Separate the dough and form into 4 pancakes.
Heat a large fry pan, and spray with cooking spray.
Place the pancakes onto the pan. When they are browned, flip and brown the other side.

Note: Don't make the pancakes too thick or the center will be gooey. =)

(Can be served with sour cream and apple sauce. Don't forget to add the nutrition info!)

    I made these this weekend with leftover spaghetti squash. I thought they were really yummy and took the advice of having them with sour cream and applesauce. It was a great alternative to regular pancakes. - 1/14/08

    I loved the idea of this. The pancakes browned on both sides but were goopy inside. The pancakes I gave an additional 20min at 350F were a lot better. Definitely use salt, pepper, and other spices as the squash is very bland otherwise. Pretty tasty with salsa. - 3/15/08

    Really good pancakes. Never thought it would be so delicious . I eat spaghetti squash all the time. And always stayed away from regular pancakes because I felt they were not worth the calories. Now I know that this pancake is what I like. - 6/26/11

    I used this with leftover spaghetti squash and served it with pork tenderloin and applesauce. Delicious! I used spelt flour instead and also baked it in the oven for 20 as suggested above. Thanks for sharing :) - 1/24/11

    I added in some shredded zucchini (squeezed the water off of it), italian seasonings and some parmesan cheese. My husband was so surprised there weren't any potatoes in them! He really thought there was! Kids loved them too! - 11/4/09

    Incredible!
    Delicious. I used potato flour AND the entire egg (I wanted the protein benefit of the egg yolk), salt, cinnamon, diatomaceous earth. Patted it down about 1/3 inch. Got involved in laundry so it kinda burned. Need to cook it lower fire longer time, I think (cooking remaining two now.). Have photos. - 11/28/17

    Fabulous! Made them tonight. Been wondering what to do with leftover sphagetti squash.Added white onion, garlic powder, ground red pepper, sea salt, dried cilantro. Used fat free Fage Plain Greek yogurt as sour cream.Mine aren't pretty, but tasty. Excellent side with crockpot apricot chicken. - 6/8/14

    I did use grated onion and gave these the extra 20 min. in the oven that someone else suggested. Mine were still a little gooey in the middle, but very tasty. Excellent side dish to lower carbs and calories. Will definitely try again. - 10/18/13

    not a fan of spaghetti squash, but wanted to try since so many great reviews. Glad I did. so took me back to my childhood potato pancakes. Just added some grated onion, did put them in the oven after cooking, and I could NOT tell they were made from squash. Best recipe found on SP so far!! - 10/4/13

    WOW!!! I LOVE potato pancakes, but have never been able to make them well, so, I figured why not give these a shot. I did add some onion flakes and chives to mine and made sure that they were not too thick. Served them with sweet and sour cabbage and chicken sausages. YUMMY!!! - 11/4/12
