Ingredients

    1 full chicken breast boneless & skinless
    1 medium onion, chopped
    1 medium yellow or orange pepper, sliced
    2 cloves of garlic, crushed or diced
    1 lg can of diced tomatoes
    1/2 tbsp extra virgin olive oil
    1 1/2 tsp dried oregano
    1/2 tsp dried basil
    1/4 tsp dried thyme
    1/2 tsp salt
    1/4 tsp black pepper
    1 tsp cornstarch

Directions

Cut raw chicken into chunks approximately 1.5" square. Heat oil in non-stick frypan and add chicken pieces. Cook until all sides have changed colour. Add onions, pepper slices and garlic. Saute until onions become transparent. Add the entire can of tomatoes and salt, pepper, oregano, basil and thyme and bring to a boil. Let simmer covered for 15 minutes and then uncover and simmer for 15 minutes more to reduce the liquid. Add the cornstarch to 2 tbsp of cold water and stir into chicken mixture until liquid thickens.

    I used diced tomatoes; I added a small can of mushrooms; and I added about 1/4 cup of Marsala cooking wine. It was delicious paired with Ronzoni Smart Taste angel hair pasta and fresh English peas. We had no leftovers at all. =D - 11/10/09

    Very good/ quick &easy to make. I used 1 can of stewed tomatoes and 1 can of diced... would have used 2 stewed if I'd have had them on hand. Also put in about 3/4 cup white wine... but I think I may have liked it better without. I felt like something was missing but couldn't put my finger on it. - 11/19/08

    I made this in a crock pot, and it was WONDERFUL!! I then had it over some whole wheat pasta... Of course you have to add calorie intake info.. - 9/27/08

    This dish is just magic for a quick meal, Ibrowned off the chicken in the oil and half a glass of dry white wine,removed the chicken and cooked the onions etcto reduce the liquid, then added the rest along with the chicken to follow the recipe. A little thought can produce many scrumo meals . - 9/25/08

    I only followed the recipe loosely (more chicken, 2 cans diced tomatoes, no oil. But the overall same idea and the flavor was awesome. Served over whole wheat pasta. Will definitely make again! Super easy! - 9/24/08

    Very Good
    Tasty and easy to make. I used chunky tomato paste instead of the diced tomatoes. It turned out thicker so I didn't need the corn starch. The other good thing about this recipe is that although it tastes great if made as described above, it's also simple enough to experiment with. :) - 9/26/11

    This was wonderful! I didn't have stewed tomatoes (boo) so I used a jar of organic tomato sauce. Also added a bit more garlic, but this recipe is such a great base. Add your favorites! We ate it sloppy joe-style on buns and topped with parmesan cheese. Will DEFINITELY make again. - 7/11/11

    I enjoyed this recipe down to the last drop!!! It was amazing!! Even my youger two enjoyed it and they never ever eat sauce with chicken. Thanx so much for the great recipe PABURNS1.
