Introduction

This is a spin-off of the Chili's Southwestern Egg rolls. Instead of deep-frying the filling, you put it in a tortilla and make a quesadilla. This is a spin-off of the Chili's Southwestern Egg rolls. Instead of deep-frying the filling, you put it in a tortilla and make a quesadilla.

Ingredients

    1 boneless, skinless chicken breast, cut into bite-size pieces
    2 tbsp. olive oil
    1/2 cup chopped red bell pepper
    1/4 cup chopped scallions
    2/3 cup frozen corn, thawed
    1/2 cup black beans, drained
    1/4 cup chopped spinach
    1 tbsp. chopped fresh parsley
    1 tsp. ground cumin
    1 tsp. chili powder
    dash salt
    dash cayenne pepper
    1.5 cup reduced fat shredded cheese
    5 10-inch flour tortillas

Directions

1. Grill or saute chicken until cooked and put aside.
2. In a non-stick skillet, add olive oil and heat.
3. Add pepper and scallions and saute until soft.
4. Add chicken, beans, corn, spinach and spices. Mix for approximately 4 minutes until spinach has separated and is well-mixed.
5. Add cheese and take off heat, stirring until it's all well-mixed.
6. You can heat your tortillas or not, this is optional.

Makes approximately five large quesadillas.

    These sound delicious, but I agree...too many calories, fat and sat. fat for just one serving. By using cooking spray instead of olive oil, fat free cheese & whole wheat tortillas, it cuts the calories down to 295.4, the fat down to 3.5g and the sat. fat down to .7g per serving. Much healthier!! - 3/6/09

    make sure you can find La Tortilla brand tortillas - much less in calories, carbs and much more in fiber.

    LOVED IT!!!!!!!!!!!!Every time I go to Chilis I get the Southwest eggrolls but they are so heavy with calories. Much to my surpise this taste just them without the calories. - 1/13/09

    Very, very good! We added some salsa and a little bit of fresh Jalapeno a few minutes before we added the cheese and it was awesome. All three of my kids loved it as well! Thanks for sharing ~ Definetly a keeper!! - 10/12/08

    Sounds like a good lower fat version, however I was surprised at the calorie content. The Chili's version is only around 900 for the entire plate full, and these are almost 400 calories each? - 1/19/09

    This recipe was delicious. I did use cooking spray instead of olive oil, whole wheat tortillas, and I used chicken tenders instead of chicken breasts. Since I was making more than one serving, I used a lot more veggies. I figured the leftovers can be used with eggs or eaten alone! - 7/12/11
