Ingredients

    1 boneless chicken breast
    2 tablespoons salsa
    tin foil
    .25 cup of low fat shredded cheddar cheese

Directions

Place chicken cutlet on a square of tin foil and top with 2 tablespoons salsa. Seal tin foil to make individual pouches for each serving. Place in 350 degree oven for 20 minutes. Carefully open pouch and top with shredded cheddar cheese and reseal pouch to melt the cheese. Goes great with brown rice.

    This is more calories than it says. 1/4 cup of cheddar is 114 calories. 4oz chicken breast is 110. For a total of 234.Not much difference but when you are dieting each calories count. - 4/12/12

    Am I the only one who had raw chicken at the 20 minutes at 350 mark?? I checked all my recipes and generally it takes 30-35 to bake chicken at 350. By the time the chicken was done cooking, the rest of the meal was cold. - 8/18/08

    This was so Fast and Easy and a delicious home cooked meal in less than 15 minutes. I did it Stovetop. Cooked the boneless chicken in a fry pan with butter flavored Pam, added a jar of salsa to the pan to heat and served over rice (10 minute boil bag) and topped with cheese on the plate. - 3/11/08

    I've tried this recipe and it is so good, and the bonus is it is so EASY! I've also made several servings in a covered casserole dish then and individually froze them over brown rice for quick lunches. - 3/13/07
