Introduction

Number of Servings: 10

Ingredients

2 boxes of Kraft JELLO Sugar Free Low Calorie (4 servings each)
1 Regular sized tub of Cool Whip Free
1 large can of Fruit Cocktail in light syrup

Directions

Mix JELLO according to package directions (Mine states to add 1 cup of boiling water to each packet of JELLO mix. Mix well for 2 minutes).
Set in freezer uncovered for about 60 minutes. (The package states to put it in the fridge but I find that this method takes to long and I forget about making it).
When the JELLO starts to thicken, take the mixture out of the freezer and stir in the can of fruit cocktail. (Very important that you do not let the JELLO set completely).
Next stir in the tub of Cool Whip. (This will create the mixture to poof, almost doubling in size).
Now after everything is all mixed up place the container back into the fridge until ready to serve. It can be served right after mixing all of the ingrediants, but I find that it tastes better if you let it settle for a little longer almost another hour.
Makes about 10 1/2-cup servings.

make sure to drain the juice or add less water. I had the 8 serving size so that may have been the problem. But the jello never set- it was very soupie- even after 8 hours - 2/9/09

I MADE THIS LAST WEEK AT HOME AND MY SON IS STILL ASKING FOR IT THIS WEEK. WE HAVE A POTLUCK TOMORROW AT WORK AND I AM BRINGING THIS RECIPE. WE HAVE SEVERAL DIABETICS SO THEY WILL LOVE IT THAT IT IS SUGARFREE (I BOUGHT THE FRUIT COCKTAIL WITH SPLENDA). - 2/18/09

Loved the recipe and brought it to a potluck! So many people asked how I'd made it. We're on a "biggest loser" competition at work and those that weren't in the contest couldn't believe this was a low cal dessert. I even used fruit cocktail in fruit juice and not light syrup. - 2/5/09
