Ingredients

    4 (4 ounce) skinned, boned chicken breast halves
    1/4 cup italian style bread crumbs
    1/4 cup crumbled feta cheese
    5 or 6 sundried tomatoes in oil, chopped
    Vegetable cooking spray
    1 1/2 teaspoons margarine, melted

Directions

Slice chicken down the middle, leaving the edges intact to make a little Pouch.
Mix together feta, sundried tomatoes, and basil. Spoon 1 or 2 tablespoons of the feta mixture onto each piece of chicken.
Dredge chicken in breadcrumbs and place chicken in an 8-inch square baking dish coated with cooking spray.
Drizzle melted margarine over chicken. Bake, uncovered, at 400 degrees for 25 minutes or until chicken is done.

    Fantabulous! I also sprayed the chicken with Pam to help the breadcrumbs stick. I also added about 1/2 tsp basil to the feta mixture. But it was sooo soo good. - 4/28/08

    Awesome! I traded the bread crumbs for dry stuffing (same cals) great flavor!! I used Pam to help the crumbs stick. The chicken was so tender. My husband loved it as well! Cant wait to make this one again! - 1/30/08
