Ingredients

    * 6 skinless, boneless chicken breast halves * 1 pinch ground black pepper
    * 1/2 cup chopped onion
    * 3 tablespoons olive oil
    * 1 (14.5 ounce) can stewed tomatoes, with liquid
    * 1/2 cup red wine
    * 2 tablespoons Splenda
    * 2 tablespoons Worcestershire sauce
    * 2 teaspoons chili powder
    *2 teaspoons dijon mustard
    * 1 clove garlic, minced
    * 1/8 teaspoon hot pepper sauce (optional if you use stewed tomatoes with hot peppers added)

Directions

1. Pepper the breasts. Brown both sides in a skillet with onions and olive oil.

2. Combine all other ingredients in a bowl.

3. Pour over breasts in skillet. Bring to a boil; reduce heat, cover. Simmer for 35 to 40 minutes, or until chicken is tender, no longer pink and juices run clear.

Makes 6 servings, each a half breast with sauce.

    I'm not a big fan of chicken breast, so I'm always on the lookout for ways to disguise it. This was really good, and one I'll definitely make again. Since I don't like chicken breast, my favourite part of the meal was the sauce over the whole grain pasta....YUMMMO! - 6/17/09

    I too served it over whole wheat pasta. This will become a regular. My husband doesn't like Splenda so I used brown sugar. I would recommend only using half the amount. - 5/29/09

    This was a wonderful dish. Very moist. I paired with cooked carrots and wild rice - mushroom flavor. Sophisticated taste, but my 9, 12, and 16 year old kids liked it. My picky 11 year did not.     I used brown sugar in place of Splenda & Rotel tomatoes & served it over whole wheat egg noodles. My husband & I both liked the dish. Next time I'll cut back on the chili powder though. The Rotel tomatoes plus the 2 tsp. of chili powder made it a little too hot! - 1/25/11

    I'm dieting and my boyfriend is not. So to be able to find a healthy dish that even he loves is amazing. I added a bit more hot sauce because the recipe wasn't that spicy without. Put over a bed of whole grain rice. YUM! - 8/8/09
