Ingredients

    4 boneless, skinless chicken breasts
    1 cup salsa
    1 package reduced sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

Directions

Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.

NOTES:
You may use half the packet of taco seasoning (I have started doing this to reduce sodium content myself)

Some slow cookers cook faster than others. Mine is a true slow cooker (have had it over 10 years.) The newer ones cook a bit faster and you may have to adjust your cooking time based on that!

I get many emails asking how much a serving is. I don't think I have ever measured it sorry! I just know that five people eat and I usually have one serving left over.

    taco seasoning is super easy to make by yourself which means half the preservatives!
    chili powder, minced garlic, a little flour, onion powder or finely chopped onion and a dash of salt. put it all in a sauce pan with a little water and cook for about 3 minutes on medium, then add to your recipe

    This was really good! I used cheddar soup instead of cream of mushroom, 1/2 packet of taco seasoning, added a can of black beans, and shredded the chicken. Served over brown rice, this makes for a very satisfying meal! - 2/9/09

    I made this last week and the whole family loved it! That includes a very picky husband, and teenage daughter. I shredded the chicken after I removed it from the crock and served it as a burrito with a low carb whole wheat tortilla filled with the chicken, sauce, brown rice, and fresh veggies! - 4/6/09

    Sub'd Picante & 1/2 can full-fat cr of chix, taco seasoning (1tsp chili powder, 1/2 tsp each cumin, garlic powder, paprika, 1/4 tsp cayenne). Sprinkled spice on chix and covered all w/ picante/soup. Omitted sour cream. Done in 3-4 hrs. Moist & Delish! Breast & salad made a meal. Will try variations. - 4/8/09

    This was so good and packed with flavor! My husband and I are on South Beach, so we put this over black beans instead of rice and it was wonderful. Even my picky 15 year old loved it...he is not on SB and he ate his on top of a baked potato and said it was great that way! Thanks! - 2/6/09

    This dish was full of flavor. I have a newer slow cooker and it cooked in just under 3 hours on the high setting. It was a huge it with my hubby too and he's super picky! We'll be making this again. - 2/9/09

    Oh my gosh!!!! I was afraid this might not be as good as everyone lead on to be, but this was def. a keeper for ALL of my picky eaters! I did it with the campbell's cheese soup, and used the entire taco seas. and a little bit of chicken broth. I also add a 1/2 can of black beans. it was AWESOME!!!! - 4/23/09

    This has become one of my family's fav foods. Everyone loves it. We have made it with pork too. We vary the intensity by sometimes picking mild, medium or hot salsa. We also sometimes add a few cups of frozen mized vegs. GREAT recipe. - 2/3/09

    My husband also loved this recipe! I used the stovetop method and only 3 chicken breasts. I also made my own taco seasoning: cumin, garlic powder, paprika, cayenne, chili powder, and a little One Step Tex-Mex chili seasoning. Definitely a winner! - 1/19/09

    This was a huge hit with my family! It does not need the sour cream either. We served it with a mixture of fiesta corn and black beans.(1/2 c ) rice (1/2 c) and baked Tostitos.(12) We felt as though we had a reastaurant quality mexican dinner without a ton of calories.     This was a nice, simple recipe. I asked my husband if it was a keeper and he said, "definitely!" I don't know how much taco seasoning I added, I just dusted each breast before pouring on the other ingredients. I also added some shredded colby and monterey cheese. - 1/26/09

    This was wonderful! I took the advice of some of the other comments and used 1/2 packet of the taco seasoning and used 98% fat free cream of chicken soup. I cooked in a newer crock pot on high and it was done in 3 hours. The chicken was very tender and juicy. Served over brown rice. Delicious! - 4/6/09

    We really enjoyed this, and will definately make again. I used cream of chicken soup. (Note to self, next time try cheddar cheese soup, only 1/2 the packet of taco seasoning, and re-calculate the calories.     I used bone-in, skinless chicken breasts for added flavor and to keep moisture in the meat. After reading through the reviews, I also used homemade taco seasoning, HR cream of chicken soup, and mashed up black beans. So Yummy!     I just made this recipe again, but added can of HR cream of celery soup, 1 C minute rice, 1 can (3/4) full of skim milk, eliminated sour cream and 1 breast. This turned out very good as well; with just a little twist!

    The salsa made this too salty for me to enjoy. Next time I will try a sweeter kind, like mango peach salsa. Will report back on that. I also liked this better on a wheat tortilla than over brown rice. - 4/3/09

    This is really good! The only thing I personally will do different next time is probably use about half the packet of taco seasoning because it's pretty hot (and I love hot...so that means it's really hot). Of course I did use Medium salsa, though. Anyway, great recipe!! - 2/11/09

    Delicious! My husband loves it as well. I'm amazed by how easy it was to make, too. I used half the packet of taco seasoning, added two cups of frozen corn in the last hour, and served it in a bowl, poured over mashed potatoes.     Tried this tonight and it turned out great! If you have a new crock pot the low setting will still cook it faster than the posted time, but this makes the chicken sooo tender and it falls apart! I served it over wheat pasta. - 1/15/09

    We tried this last night and it was fantastic! Added a little chipotle tabasco sauce. Also did half chicken thighs and half breasts since hubby doesn't like the dryness of chicken breasts alone. That does throw the nutritionals off, though since thighs have more fat. - 1/15/09

    I was really disappointed after all the great ratings! My kids lreally liked it but my husband and I thought it was REALLY bland. I may try it again since it so simple. - 1/23/09
