The flavor of the sauce was good but thin. Maybe that would be good if I served over rice, but I'm eating low carb right now. I used 2 lbs of chicken breasts sliced into 3/4" pieces. They were somewhat dry. I think thighs would work better. I also used Healthy Request cheddar soup.
I am planning on making this tonight. Sounds delicious! Only problem I have is the calorie count. If you use whole can of the soup, its 1.5 cups, not .5. When i did the makeover to correct this, the calories go up to 221 per serving. Or are u supposed to only use .5 cups and not whole can soup?
I used the salsa with the black beans and corn in it and left out the soup. It was so moist and wonderful. I love Mexican food and this really satisfied. Great crock pot meal. I served it on a whole wheat tortilla with some fat free sour cream, 2% sharp cheese. What a meal!
We liked this alot. left off the sour cream just to keep the calories down a bit.
there is a recipe for "taco seasoning" in the cookbook - i use that... it's also has NO SODIUM which is an added bonus because the packages of seasoning are overwhelmingly full of sodium.

this recipe is awesome - but the one in the cookbook is healither and just as easy to make and super yummy!
Awesome recipe. But I wantd it 'chunkier', so I used a can of mild chiles and a can of diced tomatoes (real can be used for less sodium). Then 1/4 C salsa for kick. Also, only used half the taco seasoning. Added a bit of four-cheese Mexican blend to the top of each breast. Very good!
I made a small modification, about 20 minutes before complete I added a few tablespoons of enchilada sauce over the salsa-topped chicken and then sprinkled low-fat Mexican shredded cheese, replaced lid and let cook for another 20 minutes until cheese melted. This was easy, good and filling. Lots of protein and flavor. I served it with Spanish rice.
I have been dieting for 3 weeks and this chicken was the best I have eaten!! Kudos!!! I made with Campbells cheddar cheese soup,also at the last minute warmed some low fat retried beans. Served with fresh avocado. Husband had it with corn tortilla's. One of my favorites...xcellent recipr
Easy and delicious! I always make my own taco seasoning - no sodium! I also used fat free sour cream, shredded the chicken with a fork when done, and added a can of drained and rinsed black beans. The whole family loved it!
This was so easy and so delicious! To cut on calories, I didn't include the sour cream and put some taco sauce on top instead for a little spice. It was the perfect dinner, will definitely be adding to my regular recipes, thanks!
