Introduction

Ingredients

    3/4 cup sugar
    .5 stick of butter (softened)
    2 large eggs
    3 bananas, sliced
    2 cup all purpose flour
    1/2 cup chopped almonds
    1/4 tsp salt
    1 tsp baking soda

Directions

Mix sugar with butter until it's creamy.
Add the eggs, bananas, almonds, flour, baking soda and the salt.
Grease a metal loaf pan (81/2" by 41/2") and add the mixture in.
Place pan in cold oven and set the oven to 300 F. Let it bake for 90 minutes (1 1/2 hour) or until a toothpick inserted in the center comes out dry.
Place in wire rack: cool bread in pan for 5 minutes and then remove from the pan and let it cool.

    I loved this recipe--I substituted applesauce for half of the butter and egg beaters for the eggs to lighten it up a bit--about 30 calories and 4.2 grams of fat per slice. Will definitely make this again, but I'll check it sooner next time, it got a bit overdone--I pulled it out at 82 minutes. - 2/18/09

    Very Good
    This was great! I only had Honey Roasted almonds, so I used those & cut the sugar down to 1/2 cup and left out the salt. I also used glass loaf pan & it worked out fine. Mine took about 75 mins. I served it with a light spread of butter & a dash of cinnamon on top. Will definitely make again - 1/19/14

    Rating this as I eat the first slice.... Very easy to make. I followed "dafycuc"'s tip and added some cinnamon and nutmeg to it. I also added a 1/2 cup of oatmeal and substituted the reg sugar with brown sugar.Cooking time for me was 75 min. It's moist and tastes lovely! - 2/26/12
