Ingredients

    cooking spray
    1 cup chopped onion
    2 garlic cloves, minced
    3 cups fat free, less sodium chicken broth
    1 (16oz.) package brocolli florets
    21/2 cups skim milk
    1/3 cup all purpose flour
    1/4 tsp. black pepper
    8oz. velvetta light

Directions

Heat a large nonstick saucepan coated with cooking spray over medium high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium high heat. Reduce heat to medium; cook 10 minutes. Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to the broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts. Place 1/3 of the soup in a blender or food processor, and process until smooth. Return purred soup mixture to pan. Makes 12 1/2 cup servings.

    Would never use processed cheese like velveeta. Used real cheddar cheese. Could use Jalapeno Jack for a more spicey soup. - 9/15/15

    OMG this is exactly what I was looking for! I wanted to thick, creamy soup that was not filled with fat and this was perfect! My husband couldn't stop eating it! The only changes I did was added 1/4 cups of minced carrot for a little color and sweetness. I also used frozen broccoli! - 1/11/16

    This was a great recipe! So easy and quick to make. I altered it slightly and doubled it and I still had it done within 45 minutes start to finish. I used cheddar cheese since we don't really like Velveta. Otherwise, great!!

    This was very good, I skipped puree, used 4 oz of 2% Velveeta, all I could find and the rest fat free shredded cheddar. 1/2 a cup is just not enough! - 11/20/13

    Sounds good. I would assume the sodium is from the Velveeta. Question, who eats soup by the 1/2 cup? Seems like an unrealistic portion size. - 12/9/10

    I made this recipe this weekend for a craft party - it was so good! I used vegetable broth instead of chicken broth becuase my friend is a vegetarian. It was a little sweeter, but still good! - 1/24/11

    Made this soup. I used broc-califlower and I added 2 large carrots chopped. I also freshly grated Parmesan cheese, about 1/2 cup, instead of velvetta cheese. I used an emulsion blender. Will make again. - 2/26/19

    I like the idea of using potatoes instead of flour as a thickener. DH has celiac disease so I don't use regular flour in cooking. Would much rather use potatoes. Also, as MTNGRL7 wrote, I would never use processed cheese.
