Ingredients

    2 pounds Chicken Breast, no skin,
    1/2 cup Onions, raw
    1/2 cup Green Peppers
    Garlic, 2 cloves minced
    Soy Sauce, 1 tbsp (go for low sodium if you can)
    1/3 cup Cider Vinegar
    1 cup Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added
    1/2 cup Brown Sugar packed
    2 Tablespoons Corn Starch
    1/2 Tablespoon Salt
    1 1/2 teaspoon Ginger, ground
    brown rice, 6 serving

Directions

Dice up chicken and fry up in pan with a few sprays of cooking spray. Once cooked all the way through In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice from can, garlic, salt, ginger, vinegar and soy sauce. Mix until smooth, then pour into the skillet with chicken Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper, onion and pineapple chunks. Heat through.

Serve over prepared Brown Rice
