Introduction

I made some adjustments based on my carrot cakes that turned out so amazingly. Am total fan of natural/healthy ingredients, but not so much that only I like it! This yummy recipe makes a great healthy dessert when we have company. Can serve with cantaloupe or strawberries...yum :p I made some adjustments based on my carrot cakes that turned out so amazingly. Ingredients

    3/4 cup egg whites (or 3 eggs)
    1 cup brown sugar
    1/2 cup raw sugar
    1/2 cup applesauce (unsweetened)
    1/2 cup olive oil
    3 cups shredded unpeeled zucchini (I prefer the coarse shred, so that the bread is less dense and still moist)
    1 tsp baking powder
    3/4 tsp baking soda
    1 Tbspn cinnamon
    1 tsp nutmeg
    1/2 tsp salt
    1 1/2 cups white flour
    1 1/2 - 2 cups whole wheat flour
    3/4 cup chopped pecans
    1 1/2 cups ghiradelli choc chips

Directions

Mix ingredients together in order of appearance, flour last. Fold in the flour just enough to be mixed, but do not overmix. Put batter in ungreased pan, sprinkle pecans on top (or mix in). Bake at 350 for 50-55min.

Fills a 10" bunt pan beautifully!
