Introduction

The texture will not be as creamy when using skim milk, you definitely get better results with 2% or whole. But, here is an easy fat-free yogurt recipe. I make it plain and then flavor it as needed. Also a great sub. for sour cream. Drain it in cheese cloth to get a cream cheese spread. Ingredients

    1 qt skim milk
    1/4 cup plain starter yogurt (from previous homemade batch, or store-bought)

Directions

Pour milk into med. sauce pan. Heat over med to med-high heat until milk reaches 185 degrees (or until bubbles are forming around edges, but milk is not boiling). Stir occasionally to prevent scalding on the bottom. Meanwhile, heat oven to 350 degrees, then turn off. Remove milk from heat and cool to 115 degrees (or until you can keep your finger in it for 20 seconds). Place yogurt in small bowl. Stir in small amt. of heated milk and mix well to thin yogurt. Pour mixture into sauce pan and stir until incorporated.
Cover and place in oven. Leave overnight, or at least 8 hours. The longer it sits, the thicker and more tart it will be.
Makes about 4 1-cup servings.
