Ingredients

    1 lb. ground chicken breast
    1/2 tsp. garlic salt
    oregano, basil, thyme and black pepper
    store-bought marinara (the healthiest I found was Classico brand--50 cal. per serving)
    whole-wheat pasta (I got Healthy Harvest fusilli, but have also used whole wheat egg noodles).
    optional: 1 tsp. parmesan cheese (NOT in nutritional info)

Directions

In a medium pot, warm the marinara sauce on low heat. Mix the spices with the ground chicken breast and shape into small meatballs (we did about 1.5-2" diameter). Gently drop the balls into the warmed marinara sauce. Cover and simmer for 10-15 min. until meatballs are cooked through. Serve with whole wheat cooked pasta. Came out to be about 16 meatballs total--4 per serving.

    Very delicious! We made this last night and are having leftovers tonight. The meatballs are flavorful, with just the right amount of bite and was able to have quite a bit of food it seemed, especially with the broccoli (or other vegetable). - 1/26/10

    Incredible!
    Very delicious!! Even my kids loved this & have requested that we eat it once a week.
    (I used ground turkey instead of ground chicken & used light Ragu alfredo sauce instead of marinara... just because this is what I had on hand. I will try it 100% your way next week!)
