Ingredients

    1 c onion chopped
    .5 c celery chopped
    3 cloves of garlic chopped
    2 tsp olive oil
    Saute above in olive oil and set aside to cool

    mix together
    3.5 c brown rice (cooked)
    2.5 c black beans (1 can)
    1 c corn kernels (frozen or fresh)
    2 eggs
    1 tsp cummin
    2 tsp oregano or parsley
    salt and pepper to taste

    Add cooled onion/celery/garlic. Pack into a loaf pan and bake for 30-40 mins @ 350F

Directions

8 servings per loaf. serve with salsa on top.
