Introduction

This is a fast and easy way to get your veggies in. You feel like you're indulging, and you aren't. Everything is healthy (YES, even the Olive Oil, which is a GOOD fat). Ingredients

    1 medium pepper (green, yellow, red or orange - my favorite is red)
    cucumber (a few slices - 5)
    carrots (I used 4 baby carrots, cut in half)
    Olive oil (1tsp)
    Balsamic Vinegar (1 tsp)
    1/2 oz. shredded parmesan
    shake or two of Italian seasoning (I have a homemade blend with garlic in it mmm)

Directions


Mix all ingredients in a bowl. Eat!!!

If you don't have all the ingredients, you can make this with a single pepper and cheese, or pepper and tomato, onion, etc. The key to the flavor is the OO, vinegar and herbs. Really clean, yummy and fresh tasting.
