Ingredients

    3 c. dried navy beans, water to cover for soaking
    1/2 c. catsup
    1/2 c. reduced calorie maple syrup
    1/4 c. molasses
    1 tbsp. dried mustard
    1/2 tsp. each, salt and pepper
    2 c. water
    6 strips bacon
    1 c. onion, chopped

Directions

Soak 3 c. dried navy beans overnight or for 8 hours. Discard water. Cover beans with 3 times their volume of unsalted water and bring to a boil. (Use a large pot because they can boil over the top.) Reduce heat, cover and simmer for 1 hours or until beans are tender. Discard water that they boiled in. In crock pot, combine cooked beans, 6 (or more) slices of bacon, diced, 1 medium onion, chopped, c. catsup, c. maple syrup, 2 c. water, 1 tbsp. dry mustard powder, tsp. salt and pepper, 1/4 c. molasses. Cover and cook on high for 4-6 hours or on low for 10-12 hours. Makes 8 3/4 c. servings
