Introduction

Papaya has large amounts of Pectin which helps it set without adding any Gelatin.Besides it has a unique taste,rich colour and plenty of Nutrition.Most of the time it does not need added Sugar---being naturally sweet as well.This is a favourite Dessert of mine as a Diabetic who has limited Fruit choices. Ingredients

    750gms.Ripe Papaya
    400gms.Plain Yoghurt(low fat)
    2tbsps.Honey
    1tbsp.Lemon Juice

Directions

PREPARATION
Using a thin Muslin Cloth ,hang the Yoghurt over the sink for 2-4 hours to drain off all the Whey.
Peel the Papaya and cut it into small pieces.After reserving a few piecesof Papaya for the garnish,blend the remaining chopped Papaya,Honey,Lemon Juice and hung Yoghurt together in a blender till smooth and well blended.
METHOD
Rinse out the 8 moulds with Water,leaving them wet inside---this helps unmould this Dessert easily onto the Serving Plate----and spread a layer of the chopped Papaya pieces at the bottom of each mould.Pour in the blended Papaya Mixture and chill in "Fridge till well set.Unmould and serve cold with Whipped Cream ,Ice Cream or by itself.A wonderfully tasty and easy to prepare Dessert----a treat for all!!!
TIP
If the Papaya is not sweet add No Calorie Splenda to sweeten to taste----increasing the quantity of Honey is an option too but this will increase the Calories.
Also adding a dash of an appropiate Liquer or a little aged Fruit Brandy will add a zing to this Recipe and make it truly unique and special!!!
