Introduction

Number of Servings: 4

Ingredients

    1 pound boiled shrimp, shelled and de-veined
    1 avocado, diced
    3 cups pico de gallo (diced tomatoes, onions, cilantro, jalepenos with lime juice)
    1-3 jalepeño peppers, diced (optional)
    8 TBSP ketchup
    1 C beef (shrimp if you have it!) broth
    juice of one lime (in addition to the lime juice in the pico de gallo)
    Celery stalks, with leaves, for garnish
    additional hot sauce (such as Valentina or Tobasco) to taste

Directions

Assemble your ingredients in a large bowl, add lime juice and stir to blend.

Ladle into 4 large "ice-cream sundae" glasses with a long tea-spoon. Garnish with a celery stalk

Serve with saltine crackers (remember to add the crackers to your calorie count) and add the hot sauce to taste!

Makes 4 2 1/2 cup servings.
