Ingredients

    8 boneless, skinless chicken thighs
    2 tsp ground cumin
    dash of salt and pepper
    1 tsp ground paprika
    1/2 tsp ground allspice
    1 cup chicken broth
    1/2 cup salsa
    3 garlic cloves, chopped
    1 can (15-19 oz) black beans (rinsed and drained)
    4 medium sweet potatoes (peeled and cut into 2 inch chunks)

Directions

Mix all the ingredients with the exception of chicken, beans and sweet potatoes in a bowl. In the slow cooker, combine the beans and sweet potatoes. Place the chicken on top of the mixture, then pour broth mixture over the chicken. Cook on low for 8 hours or on high for 4 hours.

    I made this last night and it was great! I used chicken breasts instead of thighs, and it turned out very well. And so full of fiber - I was stuffed! Thank you! - 12/30/10

    This was quite delicious! I was gone from home for almost 12 hours - I used frozen chix thighs (4) and cut the sweet potatoes in bigger chunks. This had great flavor and was very yummy and easy. Thanks! - 10/26/10

    So, so good! I used chicken breasts instead of thighs and added more salsa for an extra kick. This dish was extremely filling and there was a lot left over. I will definitely be making this again! - 9/10/10
